It provides a good balance in amino acid composition and has excellent processing ability such as gelling, emulsifying ability, water and oil- holding capacity, as well as good synergy with transglutaminase (TG). Its applications include meat analogues, dairy substitutes, Chiba tofu, salad dressings, soups, pastas, and beverage powders.
Pea protein is extracted from peas, with functional properties including water and oil holding, emulsifying, foaming, and gelling. Its food applications include snacks, noodles, sausages, dairy substitutes, supplement powder, and meat analogues.
Soy Dietary Fiber
Soy dietary fiber is used as a good source of dietary fiber and water holding agent in a wide range of applications, such as bakery products, nutritional beverages, nutrition bars, and extruded cereals and snacks.
Vital Wheat Gluten
Vital wheat gluten is a powdered form of wheat gluten with almost 100% gluten and no starch. It is mainly applied in baking to add elasticity to flours and improve the rise of the raw dough.
